As Saturday was a completely dreary depressing day in Brighton I decided it was high time to do some baking. The rain meant I wasn't overly keen on walking to the supermarket so instead I did some Pinterest research on store cupboard baking. It turns out you can actually make some really scrummy treats from the basics in your pantry.
I chose to make Peanut butter cookies. It seemed surreal that such a short list of ingredients would make a successful bake but much to my surprise it did. They were crunchy and chewy like every good cookie should be. The added bonus is that they were also wheat free!
1 cup Peanut Butter (I used crunchy)
1 cup sugar
1 tsp baking powder
- Preheat oven to 170
- Mix all the ingredients up in a bowl
- Roll into 10p size balls and pop on a lined baking tray
- Bake for 10/15 mins
