RECIPE: Deliciously Ella Brownies

I love it when I find a new blog that I can sink my teeth into. Recently it's been food blogs that have been capturing my attention more and more. Being a recent gluten free convert I am constantly on the hunt for good recipe blogs. My friend introduced me to the Deliciously Ella blog and it was like discovering tortilla crisps are gluten free all over again (hello crisp addict!).

I've already tried her Coconut Cacao Bites and they were yummy so next up I gave her Sweet Potato Brownies recipe a whirl.

I love veggies in cakes as you might have seen from my Avocado cake post so I was really excited to try this out.


2 Medium Sweet Potatoes
2/3 cups ground almonds
1/2 cup buckwheat flour
14 medjool dates
4 tablespoons raw cacao
3 tablespoons maple syrup
Pinch of salt.

I started by steaming the sweet potatoes with a DIY steamer aka a colander, a saucepan and a big lid to cover them both.

Once all the ingredients are mixed together (a blitzer is needed for the sweet pots and date part of the recipe) I popped the mix into a lined baking tray.

 Cooked for 20 mins and voila, deliciously creamy, no added sugar chocolate brownies. And what's more, they are vegan AND GF. You can thank me later.

I haven't decided which recipe I am going to tackle next as there are just too many good ones to choose from. I urge you to check her out if you are GF, vegan or just want to eat a bit more naturally.
