For the past three weeks I've been getting back into the 5:2 diet. I did it last summer and not only did it help me lose weight but it also improved my energy levels and made me think a lot about my consumption, combine that with a recent interest with dairy free and gluten free and my head is bursting at the seams with food ideas.
Trying to do the 5:2 diet whilst also trying to be dairy free and gluten free is tricky but I am going to share a few of my favourite fast day recipes with you. Today's recipe is asparagus with fake hollandaise at only 92 cals. Asparagus is amazing if you are on a restricted calorie intake as 100 grams (which is around 7/8 sticks once you've snapped of the ends) is only 29cals according to MyfitnessPal. It's also in season at the moment so it's around in abundance.
100g asparagus (29cals)
1 tsp (10g) Dairy free mayo (51cals)
2 tsp Lemon (2cals)
1/2 tsp yellow mustard (5g) (4cals)
Water to dilute to preferred thickness
Pinch Cayenne Pepper (3cals)
Salt and Pepper to taste (3cals)
1. Boil the asparagus for approximately 7 minutes.
2. Whilst this is cooking away, you can mix up your hollandaise, to do this pop all the other ingredients into a bowl and mix. It may be a bit thick so reduce it slightly by adding a bit of cold water and stir.
3. Drain the asparagus and pop onto a plate. Now pour on your hollandaise and season with salt, pepper and cayenne pepper. You can heat up the hollandaise if you like, just be sure it doesn't boil.
4. All that's left to do now is enjoy your 92 cal lunch or add some salad leaves for a light dinner.
