RECIPE: 5:2 Salad Bowl


Only a quick post from me today as I am running from meeting to meeting but here is a recipe for a quick and easy fast day lunch which you can easily pop in some tupperware to have on the go!

I love apples in salads and this apple/beetroot combo is the bomb!



Ingredients:

30g Salad leaves (6cal)
7 Cherry Tomatoes (20cals)
1 Pink lady apple (47cals)
1/4 cucumber (20cals)
75g baby beetroot (34cals)
Lemon Juice and Salt & Pepper to season (5cals)


Method:

Chop up the apple, cucumber and beetroot and mix with other ingredients. Simple as that and only 132cals!
